French Toast

Ingredients

1 egg white
1 egg, whole
1/4 cup milk, skim
1/4 teaspoon cinnamon, ground
1/8 teaspoon nutmeg, ground
1/2 teaspoon vanilla extract
4 slices wheat bread
1/2 teaspoon peanut oil

Directions:

I like Nathan Pritikin's advice about cutting cholesterol whenever possible. Instead of using 2 whole eggs, I discard the yolk from one end and cut down on the cholesterol. Try it for any egg recipe you use. Two egg whites equal one whole egg in volume.

1. In a pie plate, mix all ingredients except bread and oil. Dip bread into mixture, one slice at a time, turning to coat both sides.
2. Wipe a nonstick griddle with the oil and heat over medium heat. Cook each side until golden.

Variation
Substitute 1/3 cup unsweetened orange juice for the milk and 1 teaspoon grated orange zest for the cinnamon.
