Banana Bread

Ingredients

1 1/2 cups whole wheat pastry flour
1/2 teaspoon salt
2 teaspoons baking powder, double-acting
1 cup walnuts or pecans, broken (optional)*
1 1/4 cups bananas, mashed
3 tablespoons vegetable oil
1/4 cup honey
1/2 cup wheat germ
1/2 lemon zest, grated (zest from 1/2 lemon)
2 teaspoons butter

Directions:

1. Preheat oven to 350ºF.
2. Sift flour, salt, and baking powder together. Add nuts and mix well until coated with flour.
3. Add banana, oil, honey, wheat germ, and lemon zest. Mix just until ingredients are combined.
4. Butter 4 ½- by 9-inch loaf pan or use nonstick loaf pan. Batter will be stiff spread evenly in pan. Bake for about 45 minutes.

Food exchanges per ½-inch-thick slice serving: 1 BREAD, 1 FRUIT, ½ FAT

If no nuts are used, subtract 36 calories, 4 grams of fat, and 1/2 FAT per slice.
