Devilish Eggs

Ingredients

8 eggs, hard-cooked
1/2 cup cottage cheese, low-fat
1 tablespoon Dijon style mustard
Dash of hot red pepper sauce

Directions:

This is a good high-protein snack to serve occasionally with vegetables and dip. I recommend serving it only occasionally because the egg yolks are high in cholesterol.

1. Cut eggs in half lengthwise. Remove yolks.
2. Mash yolks with remaining ingredients and spoon mixture back into egg whites.
