Applesauce Bran Squares

Ingredients

1 cup unbleached flour, white
2/3 cup whole bran cereal, Bran Buds, All Bran, or 100% Bran
1/2 cup rolled oats, regular or quick (not instant)
2 tablespoons brown sugar
1/2 teaspoon baking soda
1 teaspoon baking powder, double-acting
1 teaspoon cinnamon (ground)
1/4 teaspoon cloves, ground, or nutmeg or mace
1/2 cup margarine, diet, (1 stick) at room temperature
2 egg whites (large) at room temperature
1 teaspoon vanilla extract
8 packets artificial sweetener (equal to 1/3 cup sugar)
1/3 cup nuts, chopped
1 cup applesauce, unsweetened, at room temperature

Directions:

This recipe from The New Diabetic Cookbook, by Mabel Cavaiani (Contemporary Books, 1984), is very good and high in fiber.

1. Preheat oven to 375ºF.
2. Place dry ingredients in mixer bowl and mix at low speed for 1 minute.
3. Add margarine, egg whites, vanilla, sweetener, nuts, and applesauce to flour mixture and mix at medium speed for 1 minute or until blended. Spread evenly in a 9- by 13-inch cake pan that has been greased with margarine. Bake for 25-30 minutes or until it is browned and starts to pull away from the sides of the pan. Cut into 15 squares and serve warm or at room temperature.
