Sugar Free Cheesecake

Ingredients

CRUST
1 1/2 cups graham cracker crumbs
2 teaspoons NutraSweet artificial sweetener
2 tablespoons butter, melted
1 tablespoon water

FILLING
1 (8-ounce) package light cream cheese, room temperature (softened)
8 (2-ounce) packages NutraSweet artificial sweetener
2 egg whites
2 tablespoons pure vanilla extract

Directions:

CRUST
Warm a 12-inch deep, Dutch oven to 375°F, spray a 9-inch spring form pan with food release. In a medium bowl combine cracker crumbs, sugar, butter, and water. Mix well. Press into the bottom and up the sides of prepared pan. Bake 15 minutes. Remove from oven and cool.

CHEESECAKE
In a large bowl, beat the cream cheese, sweetener, egg whites and vanilla until smooth and fluffy. Pour the cream cheese mixture into the crust and smooth the top with a spatula.

Place the spring form pan on a cake rack inside the Dutch oven. Bake at 375°F for one hour. Remove from Dutch oven and cool completely.
