Apple Fritters

Ingredients

1 cup flour, sifted
1 1/2 teaspoons baking powder
2 tablespoons splenda or xylitol sweetner
1/2 teaspoon salt
3/4 cup milk
1 large egg
4 large apples

Directions:

Sift dry ingredients together. Add milk and egg. Beat well. Peel and core apples, then slice apples into 1/4-inch thick rings.

Dip rings into batter and drop into a Dutch oven with 1-inch to 1 1/2-inch hot 375°F melted shortening. Fry until golden brown on both sides, about 1 1/2 minutes each side. You may need to flip rings over half way through cooking to fry both sides.

Drain on a cake cooling rack or paper towels. Sprinkle cinnamon sugar ro powdered sugar over the top of fritters and serve hot.
