Oven-Fried Chicken

Ingredients

1/3 cup low-fat plain yogurt
2 tablespoons lemon juice
1 tablespoon peeled, minced ginger root
1 clove garlic, minced
1/2 teaspoon ground cumin
1/8 teaspoon ground red bell pepper
4 whole chicken breasts, halved and skinned (32-oz)
1 1/4 cups oat-bran cereal flakes, , crushed

Directions:

1. Combine yogurt, lemon juice, ginger root, garlic, cumin and pepper.

2. Add chicken, turning to thoroughly coat chicken.

3. Cover and refrigerate at least 2 hours, turning occasionally.

4. Spray 13 x 9-inch baking dish with nonstick vegetable cooking spray.

5. Remove chicken from sauce with as much sauce as possible. Coat with cereal.

6. Place fleshy side up in pan in a single layer.

7. Bake at 400°F about 50 minutes or until brown and tender.
