Rice Pancakes

Ingredients

3 eggs separated
1 cup white rice cooked
1/2 cup milk
2 tablespoons flour
1/8 teaspoon salt

Directions:

Beat egg yolks stir in cooked rice, milk, flour and salt until well combined. Beat egg whites until stiff peaks form fold into batter. Bake on hot, lightly greased griddle until edges start to dry. Turn and bake other side until golden brown. Serve immediately.
