Creamy Egg And Noodle Bake

Ingredients

4 ounces green spinach noodles (about 3 cups)
2 tablespoons butter or margarine
1/2 cup onion finely chopped
1 clove garlic minced
8 eggs hard-cooked
2 cups cottage cheese (16 oz.) small curd cream-style
1 cup sour cream
1/3 cup Parmesan cheese grated
2 teaspoons poppy seeds
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon black pepper
dash hot pepper sauce bottled
3/4 cup bread soft crumbs (1 1/2 slices)
1 tablespoon butter or margarine, melted
Parmesan cheese

Directions:

Cook noodles in boiling salted water according to package directions drain and place in a large bowl. Melt butter in small skillet sauté onion and garlic until tender but not brown. Toss noodles with onion mixture. Chop 6 of the eggs (save 2 for garnish) add to noodle mixture. Combine cottage cheese, sour cream, Parmesan cheese, poppy seed, Worcestershire sauce, salt, pepper and hot pepper sauce in small bowl. Fold into noodle mixture. Turn into a 11 3/4 by 7 1/2 by 1 1/2 -inch baking dish or large casserole.

Combine bread crumbs and remaining butter, sprinkle on casserole. Garnish with remaining hard-cooked eggs, cut in wedges. Bake uncovered at 350° for 25 to 30 minutes or until hot and bubbly. Serve with additional grated Parmesan cheese, if desired.
