Green Tomato Relish

Ingredients

2 quarts tomatoes green, measured after being put through food chopper, using a coarse blade
2 quarts cabbage measured after being chopped quite fine
6 green bell peppers and 6 sweet red peppers, chopped, using the medium blade
1 quart onion measured after being put through chopper, using the medium blade
1 cup salt
1 quart water
1 1/2 quarts cider vinegar
1 quart water
4 1/2 cups sugar
1/2 cup mustard seeds
1 tablespoon mixed spices
1 ounce celery seeds

Directions:

Mix the tomatoes, cabbage, peppers and onion. Add the salt and 1 quart of water. Stir and let stand overnight. Next morning drain and press in cloth or fine colander to remove all liquid possible.

Combine the vinegar, 1 quart water, sugar, mustard seeds, spices and celery seed. Boil for 5 minutes. Add the chopped vegetable mixture, bring to a boil and pour into sterilized jars and seal at once.
