Four-Cheese Ball

Ingredients

1 (8-ounce) package cream cheese
1 (3-ounce) package cream cheese
1 (5-ounce) jar pasteurized process cheese spread
8 ounces sharp cheddar cheese shredded (about 2 cups)
4 ounces roquefort cheese crumbled (about 1 cup)
2 tablespoons milk or half-and-half
1 tablespoon green onion chopped, including some green
1/4 teaspoon paprika
1/8 teaspoon hot pepper sauce
Chopped walnuts, pistachios or parsley, about
Wheat crackers or fruit

Directions:

Bring cheeses to room temperature. In a large mixer bowl at low speed, beat cheeses, milk or half-and-half, green onion, paprika and hot pepper sauce until well blended. If making two balls, divide mixture in half. Cover and chill at least 3 hours or overnight.

Shape into one or two balls, using wet hands for final shaping. Wrap in plastic wrap and chill up to 2 weeks.

Remove ball from refrigerator and let ball stand for 30 minutes to soften before serving. Roll in nuts or parsley. Serve with wheat crackers or fruit.
