Cripple Creek Cheese Spread

1/4 cup butter or margarine
1 tablespoon beef bouillon
1 teaspoon paprika
1 cup cottage cheese small curd (about 8 oz.)
4 ounces cream cheese softened
2 ounces blue cheese crumbled (about 1/2 cup)
4 drops hot pepper sauce
Water biscuits or unsalted crackers


In a small saucepan, mix butter or margarine, bouillon granules and paprika. Cook and stir over low heat until butter or margarine melts and bouillon dissolves. Remove from heat set aside to cool slightly.

Place cottage cheese, cream cheese, blue cheese and hot pepper sauce in a food processor bowl or blender container. Cover and process or blend until smooth. With motor running, gradually pour in butter mixture and blend well. Pack into a crock. Serve or cover and chill up to 1 week.

If chilled, remove from refrigerator and let stand about 1 hour to soften before serving. Serve with biscuits or crackers.
