Cooked Cornmeal


Serves: 6

Ingredients

1 cup yellow cornmeal
1 cup water cold
3 cups water boiling
3/4 teaspoon salt

Directions:

Mix cornmeal (yellow or white) with cold water. In saucepan, add cornmeal mixture to boiling salted water. Cook and stir over medium heat for 7 minutes or until thick. May be served as cooked cereal or chilled for making Fried Cornmeal Mush (see below).

Variation
Fried Cornmeal Mush: Cook cornmeal as described above. Spread hot cooked cornmeal in loaf pan and refrigerate. When it is thoroughly chilled, cut in 1/2-inch slices. Fry in hot fat or butter and oil in skillet until golden on both sides. Serve with honey or maple-flavored syrup.
