Coconut Date Cookies

Ingredients

1 cup vegetable shortening
1/2 cup brown sugar, lightly packed
1 cup sugar granulated
3 tablespoons orange peel grated(optional)
2 eggs
2 cups flour, stirred and measured
2 teaspoons baking powder
1/2 teaspoon salt
2 cups coconut flakes
1 cup dates chopped
1 cup rolled oats

Directions:

Cream together shortening, sugars, and orange rind, if used. Add eggs, one at a time, beating well after each addition. Sift together flour, baking powder, and salt add to shortening blend well. Stir in coconut, dates, and rolled oats. Drop by teaspoonfuls onto greased baking sheet. Bake at 350 degrees F. for 10 minutes. Makes 4 dozen 2-inch cookies.
