Cheese Strata

Ingredients

12 slices white bread
2 cups Cheddar cheese, shredded
4 eggs
2 1/2 cups milk
1 teaspoon dry mustard
1 tablespoon onion chopped
1 1/2 teaspoons salt
1/4 teaspoon black pepper

Directions:

Remove crusts from bread. Arrange 6 slices of trimmed bread in bottom of well-buttered 12x7x2-inch baking dish. Cover with cheese, then with remaining slices of trimmed bread. Beat eggs add milk, mustard, onion, salt, and pepper pour over bread and cheese. Cover with plastic wrap refrigerate several hours or overnight. Bake at 350 degrees F. for 60 minutes or until done. Serve immediately.

Variations
Sausage Strata: Cook 1 pound (approximately 16) pork sausage links until brown. Cut into thirds and arrange over cheese. Continue as above.

Cheese and Spinach Strata: Clean and chop 1 bunch of spinach or use 1/2 bag (5 ounces) of frozen spinach. Toss with cheese. Continue as above.

Shrimp Strata: Arrange 2 cans (4 1/2 ounces each) broken shrimp, drained, over cheese before covering with top layer of bread slices.

Salmon Strata: Drain 1 can (1 pound) pink or red salmon, saving liquid to use in place of equal amount of milk. Remove skin and bones, if desired, but not necessary. Break salmon into pieces. Arrange over bottom layer of bread slices. Reduce cheese to 1 cup sprinkle over salmon. Continue as above.
