Cheese Souffle

Ingredients

1/4 cup butter
1/4 cup flour
1 teaspoon salt
1 dash cayenne pepper
1 1/2 cups milk
2 cups Cheddar cheese, shredded
6 eggs yolk, beaten
6 egg whites, stiffly beaten

Directions:

In medium saucepan, melt butter (or margarine) stir in flour salt, and cayenne add milk and blend. Cook over medium heat, stirring constantly, until sauce is thick and smooth. Add cheese stir until melted. Remove from heat. Add beaten egg yolks mix well. Cool mixture slightly, then pour slowly over stiffly beaten egg whites, cutting and folding mixture gently until mixed. Pour into ungreased 2-quart casserole. With teaspoon, draw line around casserole 1 inch in from edge. (When baked, center of souffle rises to form a top hat.) Bake at 300 degrees F. for 1 1/4 hours. Serve at once.
