Broccoli Light Soup


Serves: 4

Ingredients

6 cups broccoli stems, raw, cut into pieces
1/2 cup onion chopped
1 potato, peeled and cubed
1 tablespoon chicken bouillon
3 cups water
1/2 cup evaporated milk

Directions:

Combine all ingredients but evaporated milk in large saucepan. Bring to boil reduce heat cover and simmer for 15 minutes or until vegetables are tender. Process vegetables in food processor or blender for 5 minutes or until velvety smooth. Combine with evaporated milk (light cream may be substituted) heat and serve.

Variation
End-of-Week Soup: Use any vegetables desired, either raw or cooked, in place of broccoli. It is best to use all green vegetables or all yellow, so that the final color is appetizing.
