Yield: 6 sandwiches

Ingredients

2 tablespoons butter
1 pound beef top or ribeye steak, thinly sliced
1 seasoned salt and pepper to taste
1 onion, chopped
1 clove garlic, chopped
1 Optional: 1 cup sliced mushrooms
1 green pepper, chopped
1 pound provolone, Gouda or Swiss cheese, sliced
6 hoagie buns or baguettes, split

Directions:

Melt butter in a skillet over medium heat until slightly browned. Add steak; sprinkle with seasoned salt and pepper and sauté just until browned. Add onion, garlic, mushrooms, if using, and green pepper; stir. Cover and simmer for 5 to 7 minutes, until onion and pepper have softened slightly. Add additional salt and pepper to taste. Remove from heat; set aside. Lay 2 to 3 slices cheese in each bun; top with 2 to 3 tablespoonfuls of steak mixture. Top with additional cheese, if desired. Wrap each sandwich in aluminum foil; bake at 350 degrees for 10 to 15 minutes, until cheese is melted.

Tip: For zesty French fries that are anything but boring, spray frozen fries with non-stick olive oil spray and sprinkle with your favorite spice blend like Italian, Cajun or steakhouse seasoning. Spread on a baking sheet and bake as directed…wow!
