Peppered Pork Tenderloin

Ingredients

18 to 24 ounces pork tenderloin (2 smaller ones are o.k.)
1 tablespoon olive oil
4 teaspoons coarse ground black pepper
1/2 teaspoon salt

Directions:

Pre heat 12” Dutch oven to 400° to 425°F. Brush entire surface of tenderloin with oil. Sprinkle with pepper and salt, pressing pepper into pork.

Bake in Dutch oven for 20 to 30 minutes or until internal temperature reaches 150°F. Remove coals from oven and let stand 10 minutes before serving.
