Country Pot Roast

Ingredients

5 to 6 pounds beef chuck pot roast (any meat)
1/4 cup oil or bacon fat
3 cups water
1/2 teaspoon pepper
1 teaspoon salt
1 cup flour
potato
carrot
1 onion

Directions:

Brown or sear meat in 12”, deep Dutch oven in the oil. Add water and seasonings. Cover and cook for 2 hours at 350°F. Keep pot very warm, but not extra hot.

Drain of extra juice in a separate pan. Leave about 2 Tbs. of juice in the roast. Put the vegetables in with the roast and return to the fire. Set juice aside with enough water to make 3 cups. Make a paste with water and flour.

When vegis are done, add flour paste to juice and simmer until thick. Add salt and pepper to taste. Gravy can be made in Dutch oven if desired.
