Spinach Frittata


Serves: 4

Ingredients

4 eggs
1 1/2 cups milk
1/2 teaspoon salt
1 (10-ounce) package frozen leaf spinach thawed and drained
3/4 cup grated cheddar or Swiss cheese

Directions:

Preheat oven to 400 degrees.

In a bowl, beat eggs, milk, and salt together. Pour mixture into a greased 8 x 8-inch pan. Spread spinach over egg mixture. Bake 17–22 minutes, or until eggs have set. Sprinkle cheese over top. Makes 2–4 servings.

*Large eggs work best for this recipe.
