Shrimp Scampi

Ingredients

4 tablespoons unsalted butter
8 cloves garlic minced
16 jumbo shrimp peeled and deveined
2 lemons jucied
1/4 cup clam juice
1 teaspoon Worcestershire sauce
1 teaspoon paprika
salt to taste
freshly ground black pepper to taste
1/4 to 1/3 cup dry Italian bread crumb
2 to 3 tablespoons extra virgin olive oil
lemon wedges to garnish

Directions:

Preheat the broiler.

In a large, heavy, ovenproof skillet, melt the butter on low heat. Add the garlic and sauté until golden brown, about 2–3 minutes. Add the shrimp and cook for 1–2 minutes, stirring well to coat the shrimp. Stir in the lemon juice, clam juice, and Worcestershire sauce and bring to a boil. Cover, reduce heat, and simmer for 1–2 minutes. Remove cover, sprinkle the shrimp with paprika, salt and pepper and place under the broiler for 5–6 minutes, or until shrimp are cooked and lightly browned. Remove from oven, sprinkle with breadcrumbs and drizzle with oil. Place under broiler until breadcrumbs are lightly browned, about 2–3 minutes. Serve immediately with lemon wedges and crusty bread.
