Chorizo al Vino Tinto


Serves: 4

Ingredients

4 Spanish chorizo sausages (do not substitute Mexican)
Spanish red table wine to cover sausages
1/4 cup extra virgin olive oil
1 cup chopped onion

Directions:

Place sausage links in a large, heavy, deep skillet and cover with red wine. Bring to a boil, reduce heat, and simmer for 20 minutes. Remove sausage and set aside to cool. Reserve wine, separately, on the side. When chorizo is cool, cut on an angle into 1?4-inch slices.

In the same skillet, heat the oil over medium heat. Add the onion and sauté until transparent. Return chorizo slices to the skillet and sauté until slightly browned. Add reserved wine and cook over medium heat until reduced. Serve piping hot with warm, crusty bread.
