Gingery Bread

Ingredients

3/4 cup water
1/4 cup molasses
2 tablespoons margarine or butter, softened
1 teaspoon grated lemon peel
3 cups bread flour
1 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 teaspoons yeast

Directions:

Make 1 ½ Pound Recipe with bread machines that use 3 cups flour, or make 2 Pound Recipe with bread machines that use 4 cups flour.

Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.

Select Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan, and cool on wire rack.

Heat oven to 350. Carefully peel away paper like skin from around garlic bulbs, leaving just enough to hold bulb intact. Trim tops of garlic bulbs about ½-inch to expose cloves. Place bulbs, stem ends down, on 12-inch square of aluminum foil. Drizzle each bulb with 2 teaspoons olive or vegetable oil. Wrap securely in foil place in pie plate or shallow baking pan. Bake 45 to 50 minutes or until garlic is tender when pierced with toothpick or fork. Cool slightly. Gently squeeze garlic out of cloves.

SUCCESS TIP
We found from our testing that for good texture and volume, slightly less yeast is needed in the 2-pound loaf than is needed in the 1 1/2-pound loaf.

Did You Know
Mild molasses, also known as light molasses, comes from the first boiling of syrup from sugar cane or sugar beets. It is lighter in color and flavor. Full molasses, also known as dark molasses, comes from the second boiling and is darker, thicker and less sweet. Either molasses will work in this bread, but the mild molasses will give you a spicier flavor that will not overshadow the ginger and cinnamon.

An Open-Face Pear Sandwich is a tasty treat to eat with a comforting cup of steaming tea. Spread a slice of Gingery Bread with softened cream cheese, and layer with thin slices of fresh pear. If you are a true ginger lover, try sprinkling some finely chopped crystallized ginger over the tip. This sandwich also is good with sliced apples.
