Crunchy Garlic Drumsticks

Ingredients

3 tablespoons margarine or butter, melted
1 tablespoon milk
1 tablespoon chopped fresh chives or parsley
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 cups cornflakes crushed (1 cup)
3 tablespoons chopped fresh parsley
1/2 teaspoon paprika
8 chicken drumsticks (about 2 pounds)
cooking spray

Directions:

Heat oven to 425°. Spray rectangular pan, 13 9 2 inches, with cooking spray.
Mix margarine, milk, chives, salt and garlic powder. Mix cereal, parsley and paprika. Dip chicken into margarine mixture, then coat lightly and evenly with cereal mixture. Place in pan. Spray chicken with cooking spray.
Bake uncovered 35 to 50 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.

Betty's Tip
If you want to save fat and calories, use 6 boneless, skinless chicken breast halves instead of the drumsticks (this will serve 6). Also, use 1/4 cup skim milk instead of the melted margarine. You'll slash 19 grams of fat and 195 calories per serving.
