Chicken with Cider Glaze

Ingredients

2 to 2 1/2 pounds broiler fryer chicken, skin removed
1/2 teaspoon salt
1/4 teaspoon black peppercorn, crushed
1/2 cup apple cider
1/2 cup roasted applesauce
chopped fresh parsley, if desired

Directions:

Heat oven to 375°. Place chicken in ungreased rectangular pan, 13 9 2 inches. Sprinkle with salt and pepper. Pour cider and marinade over chicken.
Cover and bake 30 minutes turn chicken. Bake uncovered 20 to 30 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut. Sprinkle with parsley.

Roasted-apple marinade is a bottled fat-free dressing and marinade made from fresh apples that have been roasted and mixed with champagne vinegar, sugar and spices. It is deep brown in color with a toasty, savory apple flavor. Look for it along with the salad dressings or marinades in your grocery store.
