Broccoli and Chicken

Ingredients

2 (10-ounce) packages frozen broccoli, cooked, or 2 bunches fresh broccoli, cooked
2 cups sliced chicken, or 2 chicken breasts, cooked and boned
2 (10 3/4-ounce) cans cream of chicken soup or celery soup
1/2 cup mayonnaise or salad dressing
1 teaspoon lemon juice
1/2 teaspoon curry powder
1 teaspoon butter or margarine
1/2 cup soft bread crumbs, or 1 cup instant rice
1/2 cup shredded sharp processed cheese
pimiento strips and nuts (optional)

Directions:

Arrange broccoli and chicken in a greased 7x11-inch baking dish. Combine soup, mayonnaise, lemon juice, and curry powder. Pour over chicken and broccoli. Combine crumbs and butter. Sprinkle cheese over contents of baking dish, then crumbs over cheese. (You can start with 1 cup instant rice in bottom of dish and omit the bread crumbs.) Bake at 350° for 30 minutes or until heated through. Trim with pimento strips and nuts, if desired.


Fun Fact: In 1969, the Woodstock Festival actually took place fifty miles southwest of Woodstock on a dairy farm in Bethel, New York—not in Woodstock, as many people believe. The Woodstock town board voted against hosting the festival due to inadequate resources, but the name of Woodstock was already printed on the posters and publicity material.
