Scramblin’ Asparagus-Potato Eggs

Ingredients

2 teaspoons oil
1 cup onion, chopped
1/2 teaspoon dried basil
1 cup cooked ham, diced
1 (14 1/2-ounce) can new potatoes, drained and chopped
1 (15-ounce) can asparagus spears, drained
1 cup shredded Swiss cheese
4 eggs
1/4 cup water

Directions:

Heat oil in a skillet over medium heat; sauté onion and basil until onion is tender. Add ham and potatoes; cook for 2 minutes. Arrange asparagus on top and sprinkle with cheese. Beat together eggs and water; pour over cheese. Cover and cook over low heat for 6 minutes. Uncover and cook an additional 5 minutes, or until set. Cut into wedges.
