Summer Roasted Garlic Butter Corn - An absolute summer staple! The corn is perfectly sweet and juicy, served with the easiest and most irresistible garlic herb butter! Perfect for summer get-togethers and barbecues!

6 ears corn
2 tablespoons chopped fresh parsley leaves
1/2 teaspoon smoked paprika
1/2 cup unsalted butter, at room temperature
1/4 cup chopped fresh parsley leaves
For the Garlic Herb Butter
3 cloves butter, minced
zest of 1 lemon
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried basil
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
pinch of cayenne pepper


Preheat oven to 400 degrees F.
In a medium bowl, combine butter, parsley, garlic, lemon zest, thyme, rosemary, basil, salt, pepper and cayenne pepper, set aside.
Place corn husks directly on the oven rack and roast until corn is soft, about 35-40 minutes.
Peel down husks and spread with butter mixture.
Serve immediately, garnished with parsley and paprika, if desired.
