DoveTailing Tips

When making the Chicken and Corn Chowder, when cooking the chicken, add 2 extra chicken breasts, cut into 4 pieces. These are larger pieces, so you will be able to find them. When they are cooked through, remove the 4 pieces and allow to cool. Shred or cube the chicken and save for Day 4, Chicken and Black Bean Casserole. When cooking the chicken in the corn chowder, this gives the chowder added flavor.

DoveTailing Tips

Cook an extra 1½ pounds of potatoes when preparing the mashed potatoes. Divide them out after cooking, and before adding the cream cheese. When cooled, mix in one egg yolk, then store until Day 5, and use for the topping on the Shepherd’s Pie.

Cook an additional ½ cup rice when making the Cabbage Rolls. Save to use in the Sweet Potato Patties on Day 3. Feel free to use white or brown rice for either recipe. Better yet, cook even more and freeze it for another time. Rice is a go-to side or addition to many meals.
