Glazed Fruit Bowl

Serves: 12

So easy and such a nice difference the "glaze" makes. This is no ordinary fruit salad. The hint of vanilla had my guests asking for the recipe. I used in season fruits so it was economical.

Ingredients:

1 (20-ounce) can unsweetened pineapple chunks
1 (3-ounce) package cook-and-serve non-instant vanilla pudding
1 1/4 cups orange juice
1/2 small cantaloupe, cubed
1 3/4 cups cubed honeydew
1 cup fresh strawberries, halved
1 cup fresh blueberries
2 cups seedless grapes
2 medium firm bananas, sliced

Directions:

Drain pineapple, reserving 1/2 cup juice; set pineapple aside. (Discard remaining juice or save for another use.) In a large saucepan, combine the pudding mix, pineapple juice and orange juice. Cook and stir over medium heat until mixture boils and thickens. Remove from the heat; cool.

In a large bowl, combine the pineapple, melons, berries, grapes and bananas. Drizzle with pudding mixture. Refrigerate until serving. Yield: 12 servings.
