Easy Spanish Rice
There's no need for the boxed stuff when you have this easy recipe for Spanish rice. Instant rice, diced tomatoes, simple aromatics and seasonings are all you need!

1/4 cup butter, cubed
2 cups uncooked instant rice
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup boiling water
2 beef bouillon cubes
1 medium onion, chopped
1 garlic clove, minced
1 bay leaf
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
Directions:
In a saucepan, melt the butter over medium heat. Add the rice. Cook and stir until it's lightly browned.
Add the tomatoes, water, bouillon cubes, onion, garlic, bay leaf, sugar, salt and pepper to the rice, and bring everything to a boil. Reduce the heat. Cover the rice and simmer it until the liquid is absorbed and the rice is tender, 10 to 15 minutes. Remove the bay leaf before serving the rice.
