Zucchini Noodles

Serves: 4

I bought a spirializer. A gadget that cuts vegetables into spirals. I use a lot. If you don't have one, or want one, you can use a julienne peeler, or even a regular vegetable peeler works well. Many times, I don't cook the "noodles", but use them raw. They are delicious. If you want them cooked, here is how.

1 tablespoon extra virgin olive oil
1 pound zucchini
sea salt, to taste
freshly ground black pepper, to taste


1. Heat olive oil in a large saute pan
2. Add zucchini noodles and seasoning to pan
3. Stir for 3-5 minutes until noodles are tender
4. Serve as a side, or top with any sauce.
