Ritzy Chicken

This is a family favorite that a friend brought for me while I was on bedrest after a medical procedure. Unfortunately due to the salt, and the dietary restriction, I couldn't fully enjoy it at the time. Now, we can however, and I have provided options for tweaking the recipe a little to make it more healthy for your family. It still does call for a stick of butter, so keep that in mind when you do your weekly planning. Ritzy chicken is also delicious when cut in strips and served over a bed of leafy greens!

If you are watching your diet, you can choose unsalted butter, and use low sodium or multigrain crackers. Be mindful that you are still using a stick of butter for this recipe though. To make cleanup easier, you can lay foil down in your pan before you grease or spray it, then when you are done, just simply lift it out. Since this chicken is also baked, you save a few calories from not frying it in extra oil.


Ritzy Chicken

Delicious, buttery chicken. Great served alone or over a bed of leafy greens.

Ingredients:
4 boneless skinless chicken breasts
1 stick butter melted (salted or unsalted)
1 sleeve Ritz, crushed cracker, (low sodium and multigrain work great in this recipe)


Directions:
Dip chicken in melted butter, then in crushed crackers. Place in greased dish and cover. Bake at 350 for 40 minutes.
