I love hominy, but forget to buy it. This is a wonderful and flavorful dish. I like to serve it with tacos for a change from the traditional refried beans.
|2 (15-ounce) cans||white or yellow hominy, rinsed and drained|
|1 (16-ounce) can||diced tomato|
|1 (4.5-ounce) can||diced green chili|
|1 teaspoon||ground cumin|
|1 clove||minced garlic|
|chopped fresh cilantro|
|salt and pepper to taste|
|shredded monterey jack cheese (optional)|
In a saucepan over medium heat, stir together hominy, tomatoes, green chiles, cumin, and garlic. Cook about 7 minutes. Stir in cilantro. Remove from heat, divide into bowls, and top with cheese.
