Sweet Potato Fries
I love this recipe. I prefer it over oven baked fries. Once you try cooking in coconut oil - you will want to cook with it always. The smell of it cooking is tantalizing, the taste is delicious, you won't have anything stick in the pan, and the healthy benefit of coconut oil is a real plus.
|2 to 4 tablespoons||Coconut Oil|
|6||large sweet potatoes, peeled and cut into steak fries|
|sea salt, to taste|
|freshly ground black pepper, to taste|
Heat the coconut oil in a large skillet (preferably cast iron) until melted.
Lower heat to low/medium and add cut fries, stiring to coat with oil. Cook for 15-20 minutes, flipping fries frequently, every 1-2 minutes. Add more coconut oil, if they look too dry. Fries will be done when they are crispy and browned on the outside and soft inside.
Salt and pepper. Let cool for 5 minutes.
