Potato Salad with Cucumbers

This is a delicious twist on regular potato salad. We love the crunch of the cucumbers and celery.

Ingredients:
| 2 pounds | red potatoes |
| 2 | celery ribs, sliced |
| 1 | cucumber, peeled and diced |
| 3 | green onions, sliced |
| 1 tablespoon | fresh dill weed |
| 1/2 teaspoon | sea salt |
| 3/4 cup | mayonnaise |
| 1/4 (16-ounce) bottle | cucumber ranch salad dressing |
Directions:
Place potatoes in a large kettle; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender. Drain and cool. Cut potatoes into small cubes.
In a large serving bowl, combine the potatoes, celery, cucumbers, onions, dill and salt. In a small bowl, whisk mayonnaise and salad dressing until blended. Pour over potato mixture and stir gently to coat. Cover and refrigerate before serving.
