Apple Barbecue Chicken
Sweet and spicy, this is a great go-to recipe for a quick chicken meal. This is a stovetop meal, but if you want to grill it you can use the sauce as a marinade. Add ingredients (except the drumsticks) to a saucepan. Simmer for 20 minutes. Cool. In a ziploc bag, add cooled sauce and chicken. Marinade for 15 minutes or longer. Grill.Yield: 2 drumsticks each
|1 tablespoon||olive oil|
|1 (18-ounce) bottle||sweet and spicy barbecue sauce|
|1/3 cup||packed brown sugar|
|1 tablespoon||chili powder|
Sprinkle drumsticks with pepper. In a Dutch oven, heat oil over medium heat. Brown drumsticks in batches; drain. Remove from pan.
Add remaining ingredients to pan, stirring to combine. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until chicken is tender. Yield: 6 servings.
