Zucchini with Parmesan Crumbs

Serves 4

Ingredients:

1 pound small zucchini
2 tablespoons unsalted butter, melted and cooled
2 tablespoons bread crumbs, preferably homemade
1/4 cup grated Parmigiano-Reggiano
salt and freshly ground pepper

1 Scrub the zucchini with a brush under cold running water. Trim off the ends.

2 Place a rack in the center of the oven. Preheat oven to 425°F. Butter a 13 × 9 × 2-inch baking dish.

3 Spread the zucchini slices in the baking dish, overlapping slightly. In a medium bowl, mix together the butter, crumbs, cheese, and salt and pepper to taste. Sprinkle the crumb mixture over the zucchini.

4 Bake 30 minutes or until the crumbs are golden and the zucchini are tender. Serve hot.
