Pumpkin Mousse
This easy pumpkin mousse is cool, creamy and ready in minutes. Cream cheese, pudding mix, whipped topping and canned pumpkin are layered with gingersnap crumbles for a fast fall dessert.

1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 can (15 ounces) solid-pack pumpkins
1 package (3.4 ounces) instant vanilla pudding mix
2 teaspoons pumpkins pie spice
1 cup cold 2% milk
1 3/4 cups whipped topping
24 gingersnaps, divided
whipped cream, optional
Directions:
In a big bowl, beat the cream cheese and sugar until smooth. Stir in the canned pumpkin, pudding mix and pumpkin pie spice. Gradually add milk and fold in the whipped topping.
Spoon 1/4 of the mousse into 8 serving dishes. Crumble the gingersnaps and sprinkle half over the mousse. Top with the remaining mousse and chill until ready to serve. Just before enjoying, top with more gingersnaps and whipped cream.
