Baked Fish

This baked fish recipe is the opposite of fussy. Use fresh or frozen fillets for a quick and simple dish that pairs with almost anything for a perfect weeknight (or any night!) meal.

Ingredients:
1 1/4 pounds fish fillets
1 teaspoon seasoned salt
pepper to taste
paprika, optional
3 tablespoons butter, melted
Optional: fresh dill and lemon wedges

Directions:
Preheat the oven to 400°F. Place the fish in a greased 11x7-inch baking dish. Sprinkle with seasoned salt, pepper and, if desired, paprika. Drizzle the melted butter over the fillets.

Cover with foil and bake until the fish just begins to flake easily with a fork, 15 to 20 minutes. If desired, top the fillets with additional butter, fresh dill and a squeeze of lemon before serving. Editor's tip: Always start to check the fish for doneness on the early side of the estimated cook time, as overcooked fish can be a bit tough.
