Stuffed Pork Chops

Ingredients

1 large apple peeled and chopped
1 medium onion finely chopped
2 tablespoons butter
1 cup dry bread stuffing cubes
1 teaspoon dried thyme
1/2 teaspoon minced garlic
1/2 teaspoon salt
2 boneless pork loin chops, 1 inch thick
1/2 to 1 cup beef broth

Directions:

1. Peel and core the apple and chop into small pieces.
2. Finely chop the onion.
3. Melt the butter.
4. Place the apples, onions, bread cubes, butter, thyme, garlic, and salt in a large bowl and mix well. 5. With a sharp knife, cut a deep pocket into each pork chop. Cut close to but not all the way through the bottom and sides.
6. Fill the pockets with as much stuffing as you can.
7. Place the stuffed chops in an ovenproof dish. Add about 1/4 inch of beef broth in the bottom of the dish. Cover and bake in a preheated 350°F oven for 25 to 30 minutes.

Important tip
Be careful not to cut yourself when making pockets in the chops. Always cut away from your hands and body.
