Greek-Style Lamb Stew

Ingredients

1 medium onion chopped
1 pound lamb shoulder
2 tablespoons olive oil
1 (15-ounce) can diced tomato or 2 medium tomatoes chopped
1 teaspoon dried rosemary
1 tablespoon minced garlic
1 teaspoon dried thyme
2 teaspoons salt
1/4 cup sliced black olives
2 tablespoons flour
1/4 cup crumbled feta cheese

Directions:

1. Chop the onion.
2. Cut the lamb into bite?size cubes.
3. Heat the olive oil in a deep pot over medium-high heat. Add the lamb and brown and all sides.
4. Add all of the remaining ingredients, except the flour and feta cheese, and stir well. Reduce the heat to low, cover, and simmer for 45 minutes stirring occasionally. Add the flour and continue to cook another 10 minutes, or until the lamb is tender.
5. Spoon into individual bowls, sprinkle with feta cheese, and serve.
