Quinoa Tabouli

Ingredients

4 cups cooked quinoa
1/2 unpeeled English cucumber diced small, or one small cucumber, peeled and deseeded
1/2 cup ripe tomato diced small
2 scallion minced (green and white parts)
1/4 cup lemon juice
1/4 cup olive oil
1/2 cup chopped parsley
1/4 cup chopped mint leaves
2 cloves garlic minced fine
salt and pepper

Directions:

Combine all ingredients in a bowl, cover, and refrigerate. This gets better after the flavors have melded a bit, so give it at least a couple hours if you’ve got the time.
