Pasta Salad


Serves: 6

Ingredients

1 pound short pasta (penne, rigatoni, ziti, spirals, fusilli, shells, etc-made fom whatever type of flour you're allowed)
1/2 cup olive oil
20 sun-dried tomatoes cut into small pieces
20 small black olives cut up
1 cup chopped fresh basil
1 can artichoke hearts in water, drained and cut into small wedges
10 cherry tomatoes quartered
2 cups grilled chicken cut into bite-sized pieces (optional)
salt and pepper to taste

Directions:

Cook pasta according to instructions on packet. Drain, and toss with all the other ingredients. Cool to room temperature, cover, and refrigerate.
