Fruit Nuggets

Yield: 12 Balls

Ingredients

1 cup dried fruit, chopped (any combination you want, but I recommend using 3 or 4 types)
1/2 ounce unsweetened chocolate melted
1/4 cup honey
1/3 cup crushed amaranth or oat cereal (1 cup uncrushed)
canola oil
shredded unsweetened coconut or crushed cereal for coating nuggets

Directions:

If using a hard dried fruit like prunes or apricots, let stand in boiling water for 5 minutes. Drain. Put all fruit in food processor and chop fine. Melt chocolate over very low heat, stirring constantly. Remove pan from heat and blend in honey until smooth. Add fruit and crushed cereal. Let cool a bit. Put a little canola oil on hands and mold into 11/2-inch balls. Roll in coconut or crushed cereal. Chill.
