Bib Lettuce with Fennel, Apple, and Roasted Beets

Ingredients

2 small beets diced (about 1/2 cups)
6 cups Bibb lettuce (or Boston or butter lettuce)
1 cup chopped fennel
1 golden delicious apple peeled, cored, and cut into bite sized pieces
Parsley Dressing or to taste

Directions:

To roast the beets, preheat oven to 425 degrees. Wrap each beet in aluminum foil and roast about 1 hour and 15 min - utes. Let cool. Peel and dice. If you don’t want to bother with all this, you may use canned or jarred beets, but be sure they’re not pickled. Combine lettuce, fennel, and apple in a large bowl or plate. Sprinkle diced beets on top. Drizzle with dressing and toss gently
