Minestrone Soup


Serves: 6
Total Calories: 221

Ingredients

1 quart tomato
6 cups water
2 teaspoons beef bouillon
3 carrots
1 (15 1/4-ounce) can kidney beans
1 chopped onion
1 cup celery
1 tablespoon parsley
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon basil
1/2 teaspoon garlic salt
1 (15-ounce) can green beans
1 zucchini, chopped
1 1/4 cups rigatoni pasta, dry

Directions:

Pour tomatoes in large pot and mash into small chunks. Combine all ingredients except green beans, zucchini and pasta. Bring to a boil. Cover and simmer over low heat for 1 hour. Add green beans, zucchini and pasta. Cook for 20 minutes or until pasta is tender.
