Skillet BBQ Pork Chops

Ingredients

1 tablespoon oil
4 pork chops
1/3 cup celery, chopped
2 tablespoons brown sugar, packed
2 tablespoons lemon juice
1 1/2 teaspoons dry mustard
1 1/2 teaspoons salt
1/8 teaspoon pepper
2 (8-ounce) cans tomato sauce

Directions:

Heat oil in a large skillet over medium heat. Brown pork chops on both sides; drain. Sprinkle celery, brown sugar, lemon juice and seasonings evenly over pork chops. Spoon tomato sauce over all. Cover and simmer over low heat for one hour.

Tip: Rice is a terrific side since it soaks up scrumptious sauce well. Prepare it perfectly...as easy as 1-2-3! One cup long-cooking rice plus 2 cups water equals 3 cups cooked rice. Stir rice into boiling water, cover and simmer over low heat for 20 minutes. Remove from heat. Let stand, covered, a few minutes more, then fluff with a fork.
