Buttermilk Pie

Ingredients

3 eggs
1 1/4 cups sugar
3 tablespoons flour
1/4 teaspoon ground nutmeg
1 cup buttermilk
1/3 cup butter melted
1 teaspoon vanilla extract
1 9 inch unbaked pastry shell

Directions:

Preheat oven to 400°F. In a large mixing bowl, beat eggs. Add sugar, flour, and nutmeg; mix well. Beat in buttermilk, butter, and vanilla. Pour into pastry shell. Bake 10 minutes. Reduce oven temperature to 325°F, and bake 35 to 40 more minutes or until a knife inserted in center of pie comes out clean. Cool.

Serve with fresh fruit, canned fruit filling, or dollops of sweetened whipped cream.

VARIATIONS:
Buttermilk Coconut Pie: Add 1/2 cup flaked coconut to the filling.

Buttermilk Pecan Pie: Add 1 cup chopped pecans to filling.

Buttermilk Lemon Pie: Add 2 tablespoons lemon juice to filling.
